Finishing Unfinished Red Oak Floors

I’m considering sealing and finishing my own unfinished red oak hardwood floor. I’d prefer to use a water based product to eliminate the amber effect of oil based products and keep the original sanded look as much as possible.
I was leaning toward Vermont Natural Coatings PolyWhey 3500 because of the low VOCs and single step process. However, I have researched that two step finishers like Bona Traffic may be superior in durability. Does anyone have experience with how PolyWhey holds up over the years? Or experience using other finishers?
