Please post a picture. There is no way to be able to offer advice without seeing what you are talking about. Be aware, that to restain, you have to strip old stain off first, because, stain needs to soak into the wood, and it cant do that with the old finish. You may just decide to leave it like it already is.

I would keep the trim. It looks very nice. I also like the kitchen floor, nothing wrong with it. I would definitely get rid of those curtains in the kitchen, they are very dated, and have been for many years now. I am not fond of the front door, but, it is a very heavy well made door, and for now, I see no reason to rush out and change it. Some rugs with color in them, and some nice pillows, and art work, to get a bit of color would be nice. It does look, though, like you have just moved in, so maybe you already have all that. Its a nice looking house. Congratulations on your new home.

I would keep the wood trim, but I'm a wood lover. The trick is to work with it, and choose colors that do not accentuate the orange-ness of it. Or, change it out yourself. If your or DH are handy with wood, trim isn't hard to make. DH is an amateur woodworker, and he easily made new window trim for a couple of rooms, which I stained. I wouldn't try to stain over what you have, though -- likely will not turn out good at all.

Why don't you live with it a while and see if it grows on you while you collect ideas and think them over? I often wonder if people say they "hate" wood trim because it's not the current trend and they're not used to seeing it, or whether they truly don't like it. I lean toward thinking it's the former. The most important thing is to have a clear design vision for your home, rather than rushing into changes you may regret later on. Especially if you just moved in.

BTW: I like the kitchen and foyer floor, but the paint colors aren't doing it any favors -- the problem is the paint, not the floor. I kinda think that may also be why you're saying you don't like the wood trim -- the paint isn't anywhere close to bringing out the best in it.

You have a beautiful home! I agree with the other comments - keep the oak and try a warm white on the ceilings and walls (same color, but flat on the ceiling). Simply White by Benjamin Moore may be a good choice. Paint is the cheapest option and easy to change.

The only wood I may consider painting would be baseboards. Paint same as wall color but in a sheen that matches flooring!
