Light colored wood-look LVP is popular right now, so you should be able to find something similar to the light colored tile. Bring home sample boards of different types and see what looks good with the kitchen cabinets. Things always look different in showroom lighting than they do at home. I would just avoid anything knotty (because that wouldn't be a good fit with your kitchen), and see if you can find something that doesn't end up looking stripey which is a common issue with LVP. That's why millworkman suggested buying a whole box of whatever you decide on. Once you see several square feet of it laid out it is going to look different than the sample.

Where can I research/learn more about the different LVP brands and their quality

I have Coretec Plusgrande in Grande Makkah Oak in my condo. I think it is the nicest LVP, looks very similar to my wood floors in my home.

I have Coretec Hayes Oak. Start by looking at each brand. Are you near any carpet/ flooring stores?
