Dealing with counter depth difference

We are renovating our kitchen in a 1920s house. it is a galley kitchen and at some point in time somebody extended the kitchen by taking out the back wall and opening up to what would have been a back mud room. As a result the wall doesn’t follow a straight line, but comes in about three inches in the section that was the mud room. We would like cabinets/counter to follow the full wall (except where the stove will go in the original portion), and are trying to figure out how best to handle the depth difference. Currently thinking of doing extra deep counters in original portion, which would include bringing the stove out as well, so that we can maintain one continuous line.

Another idea would be that we put a shallow 15 inch cabinet to the right of the stove keeping the same counter line as the counter to the left, and then a slight jog where the subsequent counter comes out. we currently have quartz countertop ordered, so would get it cut with the jog.

Other alternative is just to make the cabinets/counter in the mudroom portion shallower, but we would really like all the space we can get so kind if hate to do that.

Attaching plan for the wall. Appreciate

any advice on this one.
