First off your cabinets are beautiful! What brand are they? I really like what you are doing.

Now.. to your question. Are you doing something like this with shelves?

I love tile walls but if you are doing shelves you don't need the tiles behind them.

Take a look at some of the images. Which ones doe you like?

Thank you! My husband made the cabinets and drawers and I stained and painted. White Oak lowers and Benjamin moore cloud white paint uppers. We're doing the entire remodel ourselves. The photos are great ideas. I like photo 3 and 5 I am thinking tile to the end of peninsula counter and go to cabinet height, with a floating shelf in line with cabinet and another one or two above that (with no tile behind the shelves). I like photo 1 a lot, but my question is would I tile below the first shelf to the end of the peninsula

I think you could tile to bottom of the counter height. but all the way to the edge of the counter like the #3 #4 and #5

We definitely recommend continuing the backsplash until the end of the countertop. We wouldn't recommend ending at the last cabinet as it might look unfinished. Here are a few kitchen designs we think might give you more of an idea of how you want to end the backsplash.
