olive trees to line fence

I am looking to plant three olive trees along 15-18’ of fence — more to (one day) obscure an ugly view over the fence., the fence itself is fine. I don’t want totally solid hedging or need any blocking for the first 7’ or so of tree height. Would these 15 gallon Olea Wilsonii/fruitless be a good choice? I like that they are “tree” shapes and not bushy near the bottom but the trunk looks awfully thin. Will it fatten as the canopy thickens? Any insights appreciated!
