Use acadia since its what you like. Flat on ceiling, eggshell or matte on walls, and semi gloss or satin finish on the cabinets. I like the same color trim, in all rooms.

I agree and your painter needs to not be choosing this but IMO same color trim everywhere and why that color of cabinets if you do not like that anywhere else .

Acadia won’t work with some of the fixed elements in the other rooms.
We also like the creaminess of it in the kitchen, but it’s just not what we want throughout the house.

Is that the deal though? You paint the kitchen cabs and off-white and the whole house has to use the same color for trim?

Acadia White trim will look fine everywhere unless you use cool wall colors with it. Do you know which colors you're going to use on the walls in other rooms? Also, I'm not sure the average person will notice if you switch trim colors if the change takes place on surfaces perpendicular to each other. Of course you can't change to something else on the same plane, but going around a corner it isn't as noticeable. If you want something else besides an untinted white, look at Simply White. It would go with Acadia White and has a little yellow to warm it up as compared to untinted. I don't know anyone who uses untinted for trim. Sometimes it's used on ceilings which tend to pick up color from the walls.

We do have rooms with cool wall colors that we aren’t repainting. There are also cool tile colors in other rooms that don’t mesh with Acadia the way I’d like.

And while the kitchen is new and well lit, much of the rest of the house is not as well lit. Very different spaces.
