Kitchen Wall Paint Color Dilemma

We are remodeling our kitchen and can’t find a wall paint color that works. Here is our dilemma. We have off-white wall cabinets (dove) with an accent island that is SW Evergreen Fog (muted dark grey green). We have whitish subway tile backsplash and white/grey quartz counters. We will also be adding a lot of wainscoting that we plan on painting some version of white. Now we are trying to determine wall color that doesn’t clash and adds a bit of color to a very white kitchen. However, we are having trouble finding something that adds color and doesn’t clash with the Evergreen Fog. A common recommendation is some form of beige or grey but we think that is to bleh. Is there anything that could add color and not clash? Would a lighter version of Evergreen Fog work (like a lighter sage) ?
