The GE Profile PHP9036DTBB ($2300) and Monogram ZHU36RDTBB ($3300) are exactly the same except for a slight difference in appearance...and a thousand bucks.

"OK" is perhaps not as precise as one might want, but given that cooktop ventilation is not specified by code, then any ventilation is OK, code-wise. Whether a hood provides OK performance is a different perspective on "OK," and depends on the user's tolerance for moisture and grease to escape into the house. So lets construct a rule defining OK from a ventilation capture and containment point of view.

Given a residential style hood, and an actual flow rate into the hood insert of 90 CFM/sq. ft., and given the cooktop's particular hob locations, and given whatever pan sizes are appropriate for those hobs, then the subset of hobs and pans causing plume expansion that remains within the insert's width will have OK capture and containment. All other hobs and pan sizes will not have OK capture and containment.

This suggests that greasy cooking should be OK if performed on more central hobs.

In addition to @wdccruise's suggestion above, you could go with the 42 inch hood and install the smaller insert (you will need protection for the uncovered wood at the bottom) with the intention of upgrading in the future. Using the smaller hood over the larger cooktop might expose wood to heat in violation of the cooktop installation requirements. These should be examined carefully.

Your plan for make-up air needs to be thought out before it is too late.
