In the list of things to worry about? Absolutely not. That mdf once cured is almost inert. Yes the glue used is questionable but once fully cured it’s fine. PFAS, off gassing from gas appliances, and lead paint are WAY higher on the list of things to be concerned about. Mdf is down below brown eggs versus white eggs

Anything you put on it to seal it will release more VOCs than just leaving it be. For aesthetics I would seal it but not because of the mdf per se
