Mortar color for tuckpointing

My fireplace is almost done (below). I was hoping to get a light grout for this Casa Di Sassi Bianco blend stone. We have white Spec mix which includes regular colored sand. I originally thought it would be the white I was hoping for. Looking at it where it is coming through from the scratch coat really isn't even close to that. I know it will lighten some, but no way to the white I see above. So do I keep the regular white or go to the white color with white sand? The picture above is the same same stone, with obvious different lighting etc.
