Bed linen reverses the drum direction periodically to help prevent items from rolling into a ball.

Normal for me is just under an hour for most full loads. If they are all towels then it is maybe 75 mins. I never user extra dry unless it is something that likes to ball up or it is a mixed load of poly and cotton where the poly drys first and makes the sensor think everything is dry.

Normal Plus is my default. Extra dry will wear garments out a lot faster as it tends to over dry most things.
