48” min for a kitchen that size. I prefer 60”

we have 54 inches......52 would be okay. is there a reason the long stretch of cabinets against the wall cant hold an appliance there? You have a cluster/ congestion problem with the appliances. If there are some constraints [not sure why that would be] maybe show what exists now and why this layout. Get help w regard the overall configuration.

Agree, 48" min, specially with the high ceilings, you want things to look proportional. My kitchen designer was great overall, but I had to keep telling her to make the island smaller and the isles bigger.

Do I see a cabinet with roll-outs? Don't do it! Just use drawers. Have a mix of 3-drawer stacks and a couple of 4-drawer stacks.

I prefer not to use 2-drawer stacks, because I find them too deep for anything I own, so only go with those if you have specific tall items you plan to store.

Also be aware that this can happen when you place a fridge next to wall ovens ...

Unfortunately, the lay out has been locked since the reno has started but you have good point on the cluster congestion with appliances! I will go with at least 50 inches for the space between the fridge and island
