Your backsplah is reading light blue on my monitor, but I can't actually tell if the tiles are light blue or gray with the undercabinet light color temp casting a blue-ish light. Regardless, because the splash looks blue, I'd paint the island some shade of blue. I think a mid to dark blue would look good for contract with the white cabs, but you have to make sure what you choose plays nice with the wall color, which looks like a slightly green-tinged greige on my monitor.

Yes, that pic more clearly shows that they're grey. But still, from the farther away pic, the cooler temperature of the light does cast a blue-ish tinge to the grey so they read blue on my monitor. But is that the case IRL? What about the wall color? Can you see a tinge of green/khaki in it IRL?

In real life I personally don’t see a cast of blue when looking at them. I can see how the walks pull a hint of green

Then that should be your starting point for a color. Perhaps a warm (green-tinged) mid to deep grey. Take a look at the Historic Colors from BM, you might find something there. IDK about green -- it would have to be just the right tone of green to play nice with the wall color.

Or, you could just paint the island the same color as the cabs and bring in colorful accents (e.g. countertop items, rugs/mats, etc). That actually might be easier, but it depends on if you want a contrasting island.

I like the dark island with your floor. I agree stools could brighten up the area and give it interest.

Keep the factory finish. You can repaint in a few years if the cabinets start to show wear. Spend the money on some unique pendants.

Maybe some better under cabinet lights as the ones you have seem dim and blue-ish.

I would replace the mud color on the wall and ceiling a more colorful color - a blue, green, olive - whatever floats your boat and looks good with the color scheme in you adjoining room. Or a more grayed version of a color, but still readable as a COLOR. That's gonna give it a lot more character, esp. by extending it up to the ceiling. Why paint the island - the contrast with the cabinets and floor is nice, looks to be a good paint job. Again, to do painted wood right (esp in a space that gets hard use and frequent cleaning) is a massive job.

When you say organic do mean like warmer tones? I know right now feels cold. Change the pendant light fixtures and change the blubs. When relator sells a house always seem use show room lights that feel cold. My brother had the same problem. I would find some nice wood chairs for the island. I think its because you have not added your items in it will feel more lived in.

Do you know the current wall color? Do you know the flooring stain color and wood type?Internet photos can be very deceiving.

I am seeing areas where the flooring is pulling a bit of pink (in front of the fridge opening) and places where the wall color seems to be pulling either pink (above the fridge opening) or green (in the fridge opening), so it is hard to determine what is happening in real life.

I personally find the black island harsh and not to my liking, but I don't use much black in my decor.

Your kitchen is beautiful. I agree with the pro. I'd bring in some warmth with some styling, like wood cutting board, spoons, knife block and maybe counter stools with wood, wicker or upholstery. Then some some greenery - in a pretty vase (not on top of the cupboards). Experiment with rugs or fabrics to understand what colors coordinate with your wall and tile color. I have a feeling that it's leaning into taupe. Stone Hearth is a beautiful, earthy color which would seem to work (if I'm right about the taupe). By itself, that would put you into a very monochromatic situation. I worry that you wouldn't be satisfied if you did only that. If you find a rug, or even some patterned towels that look utterly fantastic with the tile and wall color, use it to pull another accent color.
