I’d suggest doing a new custom mirror just within the slim light fixture side. Have it go all the way to the ceiling and have your new light fixture be installed over the mirror. Then put the towel ring and some art above it on the left side.

This is not a location where you use framed mirrors. I'd consider installing mirrors that extend higher in the room and then add a pendant over the sink.

I agree and please redo the paint without the shine that only magnifies that horrible textured wall

If you are not prepared to deal with the textured walls; you are limited to basically the same set up.
