This makes a lot of sense to me. I would just adopt a habit of keeping the bathroom door closed at all times so it doesn't feel like a part of your living space.

There is no counter space in that kitchen. I'd add a correctly proportioned island (5 or 6x3ish?) for that purpose and to put bar stools on the other side so there's somewhere to eat.

No,matter what that range should not be next to a wall ever. I think the island for both work space and seating can work that allows that range to be moved so sink and DW in the island As for the bathroom door just shut the door it is not like you see the toilet anyway .

Agree with other suggestors.Range needs counter space on each side,but do use the ice water stone fire layout.
I would want fast easy straight line access to the toilet with outward opening door and walker /wheelchair wide doorway.
A movable island or table with lockable wheels will give extra snack / work space

Sorry, I forgot to add … at the back of the pantry, invisible to the renters, will be a framed in door to the main house, in case my husband and I ever want to live in this as a mother-in-law sweet, it would be easier to put a door there, no drywall tear out, since it would already be framed in.

With any remodeling, it is paramount to know what the existing constraints are. How can anyone know if the tweaks are good if they have no idea what is being tweaked?? Hire a local architect that can protect you from you and provide you with am economical design that meets your needsand fits your site.
