Gypsum plaster or ?

I'm trying to find out the type of walls I have in this house. Think it was built late 50s early 60s. After prepping the dining room wall there is alit of smooth shiny spots that are pink and yellow and under it is a grainy rough material. It reminds me of concrete. I prepared the walls just as I did in my living room but for some reason I'm this room I'm having issues. I want to skim and add texture like I did in my lvrn. For some reason after I skimmed and waited 2 day to apply texture it want to pull away and bubble where those smooth areas are. Please tell me what I can do and any materials I need to get to get this done.
