Sure you can, as long as they coordinate and look good together. So I wouldn't pair a quartzite with movement with a quartz that has veining. In general, pick one star for your kitchen; so if your island is a showy quartzite then do a quiet backsplash and either the same quartzite on the perimeter or a quiet, coordinating quartz.

It's also often recommended here that if you change counter material / color, keep all the cabinets the same color. If mixing cabinet colors, keep all the counters the same.
