4" recessed led 3500k can lights putting out a beam pattern producing at least 450 lumens/70-80 footcandles at the counter surface. Ceiling height will come into play. These are located 6 inches in from the counter edge to avoid shadows from your body. It's better to have two offset for a work zone like a sink, cooktop or prep space. DMF, Lucifer and Element are some sources. Juno, WAC and Wolfspeed(Cree) are more. You'll probably need more output than you can get at HD or Lowes. Philips may work and is available at HD. 1000 lumens at the fixture is a start.

??????? we need pictures or at least show us the plan The best when no uppers is good overall lighting provided with pots I happen to like LED 4000K in kitchens but 3500 is fine you need lots then maybe some pendants over an island , who knows . LED lighting is available everywhere now even HD . Show us you plan then we help.

Is the stove top against a wall or on an island? If against a wall, do you have a vent hood for it? The hood should have some lighting.
