Were you hoping for it all to match? It’s OK to have more than 1 wood tone per space.

I suspect the darker color will show less dirt, you might like that better.

The walls and bar ended up being more of a chocolate color rather than walnut. The bar is too dark with the black granit.

Ceiling is good. We wanted the lighter natural look there. It’s where the wall meets the pavilion beam that doesn’t look good to me.

Consider leaving the dark stain or painting. It will be very difficult to sand down the darkly stained wood without blotchiness showing through if you try a lighter stain. Unfortunately paint can peel so stain is usually a better choice.

I kinda like it.

The brown stain on the wall look quite nice. I suggest you paint the beams and posts in a black stain (not paint). Could be quite striking with the wood tones making them stand out.

No white! I don't see a problem, everything looks purposeful. If anything, the suggestion for an Ebony stain by lisedv is a great idea.

Some hits of black could be nice. Any chance this faces south and the sun can fade it for you?
