In finished state, there's no measurable difference.

Your sycamore humus will stick around longer. Your leaf mold is a super valuable soil conditioner, which attracts fertilizer-pooping worms. I depend greatly on worm castings and worm movement in my garden, so I mulch my beds with leaves and compost. I use wood for my paths and sometimes switch my paths around when the wood chips turn lovely. A very minor point---leaf mould, by definition, is well rotted.. You knew that, though.

You using your rotted wood on the strawberry bed is an excellent use for it. The bed will require an annual mulching, but all your plants would appreciate that as a mulch. I would prefer using compost or leaves, but I don't turn my back on any mulch materials.
