We utilize the sofa as separation between LR and DR. Behind is placed what we term a wine table - it functions for both spaces.

You certainly can install a dimmer switch to change the lighting intensity. Possibly different bulbs will be necessary because not every one is dimmable.

Hire an electrician to make your lights dimmable. Then address whether or not you need more task lighting or reading lights. Then decide if your room would really benefit from a console table.

Yes- same room. This layout looks better from the kitchen for sure - and the traffic flow from the kitchen is better. But iwalking into the back of the sofa from the main entry seems awkward to me so I thought a console might help. And I’m just now noticing that the windows are off center. :-/ windows ar

Off center from what? Symmetry is way overrated ... you are looking for a balanced space. Whether something looks symmetrical will also change as you move around the room, so trying to force symmetry from just one spot in the floor plan is a losing battle.
