Need to see your kitchen to offer much in the way of advice. Context is key.

Quartz is not a good material to put behind a gas cooktop. It can scorch and melt if you don’t have the needed clearance for the appliance.

I love the granite you are showing in your inspiration images. Is one of those your actual kitchen? Why ever would you change stone to quartz?

This can only be answered in context of other materials. Can you show us what quartz you are looking at and whether you are making other changes to the cabinets, floor, or walls.
