Looks like most are Acer palmatum, yes? Japanese maple roots are very vulnerable to cold temperatures and can be damaged fatally if exposed to temps below 25F for more than a few hours.

You don't want the rootballs to get much below freezing so the pots need to be stored in something like an attached but unheated garage or somewhere that stays above freezing but below 40-45 degrees. The alternative is to heel the pots into the ground like in a disused vegetable garden or nursery bed and then mulch well.
