You do not mention the color of the trim throughout the house.

Accent color should be darker...choosing S W Cadet.

Not suggesting this particular knob...just the color....Amerock has lots of choices. You want that undertone in the black to work with Acessible Beige.

Where do want to add color. Walls are the backdrop for your art, area rugs, furnishings and decor.

I usually start with asking "what are your favorite colors" before starting to look at neutrals, but honestly, your neutrals are good with most colors. They work with blues and greens, some reds. I don't love Accessible beige with purples, pinks, yellow or beachy tones that are light and clean.

I think Accessible Beige and Stardew look great together.

The question is what are you painting Stardew and what art, area rugs or decor items do you have that goes with the Stardew paint color and Accessible beige.

One warning - walls are large, always make sure your color isn't too saturated because it can be overwhelming when you see 100 sf painted on a wall. Stardew is not too saturated. It is perfect.
