I'd remove the wall between the current kitchen and dining room. Move the dining room to the bay window area. Do a long L-shape kitchen with island along the full right hand side of the plan. Sink under front window. You could expand the mudroom a bit into the current kitchen space, maybe add a pantry in that area as well.

The room looks gigantic as it is, so removing the wall will make the whole space so cavernous that it will be uncomfortable. You will also lose wall space for cabinets and storage.

Post a floor plan with all the dimensions marked to get better advice. Also what is your budget for this renovation?
