My first choice is paneled appliances (fridge and dishwasher) to match the cabinets, because I hate cleaning stainless steel, but if paneled didn't work with the budget, my second choice would still be stainless steel.

Matte black finishes are becoming increasingly available across many appliance brands and trim lines. These are certainly lower in fingerprint maintenance than stainless. However, I would definitely panel a fridge since having a large refrigerator in Matt black could end up mimicking a giant retro chalkboard in one’s kitchen. Just my own two cents in my own aesthetic for what little that may be worth to you.
