What's the manufacturer and year of your home? If it's after 1976, it was built with 2x4 walls, which should be able to hold your cabinets with no problem as long as they're attached to the studs. The sheetrock is a non-issue. It's the walls behind the sheetrock you have to be concerned with. The granite shouldn't be an issue either. You have a steel frame under your home that's meant to carry the weight of the entire home. If mobile homes are common in your area, you might want to look for a contractor who's familiar with working with them, although the construction isn't that different. The only difference is you might have 24" on center walls instead of 16". All of that information should be available online or through the manufacturer.

You should be fine then. You most likely have 2x4 walls, maybe even 2x6, depending on manufacturer. Will you be moving things around or just keeping everything in the same place? I would suggest replacing as many lower cabinets with drawers to increase your storage. They're so much easier to get things in and out of as well.
