It would help if you posted images of the complete room. I agree that plumbing shouldn't move but we have to see the total room to see if there is a way to provide you with storage and simplify the layout. Angles in bathrooms are always problematic.

Close! Both sides of the vanity are the same size 30’’ and in the shower it has a right angle that matches with the wall of the toilet and vanity. Also the door opens towards the vanity rather than the wall

Since the plumbing is staying, I would make the vanity, mirror and lighting read as one deliberate composition on the angled wall instead of trying to hide the angle. Center the mirror on the sink, keep it clearly narrower than the vanity, and use a round, arched or soft-rectangle shape so it does not introduce another strong competing angle. A wall-to-wall rectangular mirror would probably emphasize the geometry more.

If you need storage, a shallow surface-mounted medicine cabinet with a finished side profile may be easier to install cleanly than deep side cabinetry in this layout. Keep the backsplash or paint treatment continuous across the whole angled wall, and choose either balanced vertical sconces or one evenly diffused light above the mirror based on the clear space you actually have.

Before ordering, tape the full vanity, mirror and light outlines on the wall. Check the view from the doorway and the door swing, not just the straight-on view. From a manufacturing and QC perspective, measure the wall at several heights and allow installation tolerance; angled walls are often not perfectly plumb, which matters for a framed mirror or cabinet.
