Apparently when I clicked white corn meal on a recent order I was buying white PAN corn meal, different from regular corn meal. A happy accident as I now know how to make arepas:
Before I even get to the deliciousness of it all, there was the mouthwatering roasted corn smell of the arepas frying along with the smell of bacon scenting the kitchen.
They are uncomplicated: water, meal, and a little salt, mixed together and rested for 10 minutes.
I made 5, that is how many fit on my small comal. Two for breakfast, three for later because they apparently freeze/refrigerate well and can be crisped up in a toaster oven.
The arepas take longer and at a lower temp to cook than pancakes and end up deliciously crisp on the outside and tender on the inside. I had mine for breakfast with cheese and bacon.
I have read of the many different fillings, I think I want to try chicken avocado. But they have definitely gained a place in my breakfast lineup.
