Bathroom vanities--sink depth and open back

I'm looking at bathroom vanities, specifically 60" double sink. I've seen some where the sink bowl depth is only 4 or 4.5 inches. Is that too shallow? This one says the basin depth is 5"

but the spec sheet shows it as 4.2"

Another thing is that many of them don't have any back panel. They're advertised as "easy access!" It bugs me. I'm looking to spend less than $2500 for vanity and top. In that range I see a decent variety of wood vanities--not particle board or mdf. Maybe $3000 or $4000 vanities have backs. Does it matter? Here's one I generally like that has no back:
