Well, there are several types of kitchen floors readily available for commercial installations. It might depend upon a few factors and even a few of the differing environments within your kitchen area; you might think about making a list of your needs and assessing them carefully for slip resistance, moisture and heat, as well as investment and ease of both installation and maintenance. A great number of commercial kitchens have quarry tile as a main floor as it is virtually indestructible and is inexpensive. It comes in a wider range of sizes and colors than it did in the past. We have specified marmoleum, but true marmoleum is expensive. It does have a nice 'give' to it underfoot that a tile won't so its easier on the legs over time, but in wet areas the slip rating may not be as superior as that of the quarry tile.

If you cannot afford ceramic tile, heavy duty linoleum and rubber are both great products for commercial-style kitchen floors:

Whatever you put down has to be impervious to grease, bleach and hot water.

There are code requirements for commercial kitchen flooring. Check with your local health department.
