The labeled name "Ebony" is a bit misleading in most of the stains on the market...
Most folks expect a BLACK/BROWN color whereas the oil based stains used for flooring are more of a dark "greenish" brown with a touch of black in the mix.
There may be some "conflict" between the reddish base color of your red oak material.

White oak may have been easier to work around considering your "taupe's & grays"... but that horse has apparently left the barn.
Hopefully, if you're leaning toward a darker color, you'll be having a GOOD professional do the finish work... They should be able to work a color scheme out.
