I would stay with white

I agree. Leave them white.

I was thinking of something less drastic than black.. maybe a darker off white to add a little depth to the door.

For your door, how about Stormy Monday paint swatch by Benjamin Moore?
It would be so beautiful with the trim!

It was fairly common back then to paint inset panels a very slightly different color of white (or a different sheen) or a pale color to give the room more dimension, but not so dark that it is that noticeable at first glance. Historical productions by the BBC are terrific for this, like their version of Pride and Predjudice, Middlemarch, etc.. Maggie Smith's house in Downton Abbey, and the movie version of Sense and Sensibility,

There was a post awhile ago about paint colors for a dining room that had specific recommendations for shades of white for paneled walls. Probably would be hard to find now...

The walls in the drawing room in the show looked like creamy white, light green or blue green depending on the light, and this picture from the film location Byfleet Manor, it looks grey, almost like your walls. Revere Pewter has that chameleon quality--maybe a lighter version would work.

I am leaving them as is for now. If they bother me too much, I will change them later.

You could pain them same color as the wall - in Satin. That would give you a slight contrast without being garish.
