If I could have afforded it, I would have used the wood-look porcelain tiles for my countertops. That way you get the look of the butcher block without the maintenance hassle.

Wood tops are beautiful but can be a big issues around a sink and they require much more maintenance. I'm not a fan of tile countertops due to the grout lines...

I'd use an oil over a varnish, as oil soaks in and can be spot-repaired, whereas varnish sits on top (like nail polish), and is likely to flake eventually.

If you re-oil periodically, they wear and last well, with normal tlc, and it's so nice to have as the counter - doesn't chip plates, shatter glasses, etc, like stones will. Plus, it's quiet, not clattery, when you move stuff around.
