What did you end up going with?
We're also wanting to replace our counter top. We want an under mount sink and want to know the most cost-effective solid surface counter top.

we've decided to redo the entire kitchen - the lower cabinets were just not worth saving and the overall layout was awkward. Since we can't save the granite, we plan to use quartz countertops - not the cheapest choice but I'll find ways to save money elsewhere. I'm still waiting for quotes to know the full cost. We met with several kitchen designers but ultimately came up with the best plan ourselves using ikea software. We plan to use a local carpenter to do custom cabinets but ikea lets you see your ideas in 3D.
