Help Redesign Kitchen Stove Area

We are looking to convert an electric cooktop to a freestanding gas range. Of course, this will require us to rework the area where the cooktop is now; removing some cabinets, installing a hood etc.

Our dilemma is that we are working within an existing space, limited by soffits and a corner oven. See 1st photo. We have an open layout in our home, so standing in the same spot (eat-in counter), you see the kitchen as well as dining/living area with fireplace (see 2nd photo, taken from same spot as first). Therefore, I was hoping to "tie-in" the theme of the fireplace to the kitchen - e.g. use similar ledge stone as backsplash behind oven - but imagine that may be hard to keep clean.

My initial thoughts are to remove the center lower cabinets (to be replaced by range) and replace existing granite with the same black granite that our eat-in counter has. But for upper cabinets, wasn't sure, especially with soffit and corner oven. Do I remove or keep upper side cabinets? Can I build some kind of arch? Will the soffit look strange - should I keep or remove?

Any ideas or suggestions very much appreciated!

Cswords- if you can fit the arch, go for it- it's. pretty look.even if you have to replace the granite cause it cracks, I would still replace it with the same granite for continuity.

And why befouled you replace the existing granite with the dark one? I am not getting that at all.

Can you get a hood that will fit in that area, so that it can be mounted right below the soffit, where the cabinets are now? I would keep the side cabinets. I see many pictures of cabinets flanking the range hood. I wouldn't personally use black granite as a backsplash - couldn't you keep what you currently have? It looks nice.

I think even a small hood might require slightly higher cabinetry than what's there currently. But would you keep your wall ovens or are you reclaiming the space for storage?

Thank you all for your ideas and feedback. To answer all of your questions:

1. We are keeping the corner oven/microwave.

2. Regarding changing the granite - I wasn't sure on best way forward and was considering two ideas. One (that I mentioned) was to do some kind of stone backsplash that would coordinate with my fireplace and as that would probably clash with the granite that is there, was going to replace with black (to match my eat-in-counter shown). However, alternate idea was to keep the existing granite (assuming it could be saved - builder could not guarantee that it wouldn't crack when replace electric cooktop with range, which requires cutting granite). If kept the existing granite, would do simpler backsplash, maybe in similar style to what is there.

3. For measurements, the space between counter and side cabinets is only 15 1/2 inches; space between counter and center cabinets is 24 1/2 inches; space between counter and soffit is 48 inches. I don't know how much space is required for hood, and whether can fit under soffit or not.

4. Thinking of your feedback, and searching on Houzz, maybe keep side cabinets and do "arch" where hood is integrated / hidden? Kind of like in this picture? If did this, would keep existing granite (hopefully!) and just redo backsplash as necessary.
