Took down tile, made a new problem...

Anyone have any ideas on how to fix this gap?
There was ceramic tile here before (it covered ALL OF THE WALLS...floor to ceiling backsplash tile. It's now relegated to only where backsplashes belong).
However now there's this unsightly gap between the wall and the laminate countertops. it wouldn't be so bad if it didnt show off how wonky our old house is; wider in some spots, tighter in others.
Anyone have any ideas?
