They'll be able to see how the removal will affect the flow of the space and what other considerations there are that you may not have thought of - ie; sound travel, flooring transitions, electrical outlets, air flow, etc. Not to mention that the wall in question may be load bearing. By moving your cabinetry and stove on the other side you're further away from the sink unless you add another sink in the island.
