Master bath-what to do with mirrors?

We are remodeling the master bath, which currently has a countertop & mirror that is approx 7 ft long by 5 ft high. We are going for a more contemporary look. We plan to replace the countertop but not the cabinets, just new doors on them. I also want to take down the wooden valance at the top. The mirror is just too much of a big blank and too hard to keep looking clean. Contractor has suggested building a cabinet to sit in the counter in the middle. Can the mirror be cut or do we just cover it? Any suggestions for this behemoth?
