Pale tan/greige, one or two shades lighter than the cabinets. But please do use samples, lighting is different in each home. Or grey, from two shades darker than the countertop (the same as the darker spots on it) to charcoal. But a fresh apple green or icy blue would look cute too.

And if possible buy a new ceiling light, something that will hang a little lower.

I'm always a fan of white cabinets in kitchens. I think it will bring out the speckles in your gray countertop and make the space feel a lot more airy.
