Which white for trim?

We're replacing all our medium oak trim with white. My question is, which white to choose? Off the shelf white is the easiest, but is it too white? Also, I'm leaning toward towards a satin finish because I don't like the super-shiney look. Should I reconsider?

What is the majority of the wall color...white undertones should lean that way. BM Chantilly Lace is one of my favorites...works well with cool colors.

Um....wall color? Lovely primer white. I haven't picked it yet, but I'm thinking something along the lines of SW Accessible Beige. We have a light red/pink brick fireplace and our kitchen cabinets will soon be med/dark cherry.
