Yes, agree with rosecottagehome. Also, yes, framing the windows gives definition. Here is a 'Spanish' leaning brick, stone and stucco inspiration for you. If you put on a porch along the front area with the arches as shown, it will give you more of the Spanish type vibe you are looking for :)
Naturally there are other styles that are more compatible with your existing structure so it depends entirely on your budget and what you want your home to say to you.



You could change out your garage door to something like these below which would add a tremendous amount of curb appeal even if you decided to not go in the direction of Spanish style.

I'd paint the white sections a dark taupe or darker shade of olive than the garage door. Either way, leave the brick and garage door and gable the same colors. Framing the windows sounds good...just not sure how you do that on the brick. For a bigger remodel, more gables would add some relief. Maybe one for the porch and a bigger one over the left portion. New, bigger windows could add interest, too. Good luck!

If you go into a contemporary design it will be easier on your budget. Having an architect come up with a sketch for you to implement over time is also budget friendly. That way you have a goal and a plan to get there so when you make a change it fits within the plan. The Los Altos that I posted before is what I am thinking. Let me see if anything else works. There are some talented people here on houzz that can give you ideas for a place to start. You have a beautiful start already so it won't be hard to make this into your home. :)

Yes, to answer your question above. The home you posted with the metal roof almost looks like a contemporary farmhouse IMO. I think you could easily go in that direction with your home. In fact, that is a wonderful style for your current home!

Yes. I noticed the photo is from a design build firm. If it were me, I would contact them first because they should have the capacity to do the drawings/blueprints as well as the construction. Naturally you will want to shop several firms to find the right one for you. Have fun :)
