In the case of making this an office, my recommendation would be to focus on the furniture, art work window treatments, lamps, etc.

To draw you eye away from the doors, I would paint them the same as the wall and have them blend in.

How often do you go into these spaces ?
I would buy two small cabinets on wheels and place them in front of each of the doors............

Would you suggest painting the trim as well?

You have two options - you either paint them out (meaning doors and trim same colour as the walls) or you draw attention to them which is what you wrote appeals. If you have an accent colour in the space you could paint the doors the same colour - if there is other white trim in the room then leave the door frames white - otherwise paint them same colour as doors.
