What if all lighting came from ceiling, including directional lighting for sink area?

We would need a mirror like this, maybe oval, but will still have a challenging height. Sconces in this picture would not work as would be much lower. Better idea to mount high and sconce faces down or drops from ceiling.

This fabric sconce is mounted higher than we have available. The size and scale is nice, but it would be more for ambient lighting and not task lighting.

We will need to be creative with mirror selection and placement and coordinating sconce, which should be as proud to the wall as the mirror in my opinion.
