Can you tell me if it's possible to have solid bamboo cabinets made, or not? I have read that there are many different ways that bamboo cabinets are manufactured. Also, I'm just not sure what's the most cost effective, sustainable way to go... Plyboo, veneers, etc...

I'm not certain of any manufacturers that can produce a
solid Bamboo cabinet door front.
My cabinet lines have a plywood or particle core with a veneer on the outer surface.
That should be your best bet in means of construction and cost. Also, if you are truley concerned about sustainability or Green factor you may want to consider a NO VOC paint finish.
