I can't tell from photo, are their one or two drawers that open?

Only one drawer opens. The top is a faux drawer because the sink is mounted directly behind it.

Do you think I could use 2 vanities like this with a space between them but with one continuos top?

A vanity like that would likely need to be custom ordered. It is possible, but not with our vanity shown in the picture, because the countertop comes pre-installed by the factory.
