Harvesting beetroot? When?

Hi!

Ok these are two stupid questions, I think, but nevertheless I need them answering.

I'm growing baby beets for the first time. How do you know when there is a 'root' on it? Does it start to bulge up under the soil? Also, if I gently prised them out, could I plant them back if they were not ready?
