so all that would be left to me.. would be letting them get frosted and harvest the dormant bulb.. and store like a canna/dahlia.. as you suggest ...

Nana, sorry I've not had those particular bulbs, but would be inclined to agree with Ken, wish you luck!

A lot of plants are called elephant ears. Including Colocasia esculenta (over 6 ft. tall now!):

You can dig up the bulbs and store them dry.

I suggest you check out the Aroids Forum. Alocasias and Colacasias are in the Araceae family, also referred to as Aroids. Those folks know a ton about growing Aroids. I grew a few for awhile, but many are root, or tuber, hardy in my zone, and I didn't have to dig them up.
