The Joy of Pickling is what you want.

To me, fermented pickles are the best. Good luck with your crop and the pickling.

Here is a link that might be useful: The Joy of Pickling

Check out the Harvest forum (linked at the top of this page). All the great picklers hang out there ;) and there are current threads running as well. Ken (ksrogers) can answer most any pickle question there is!

thanks.

Yesterday, my sister, who is in her 70's, gave me a quart of her sweet pickles from 2005. These things are sooo delicious! Still crunchy and not too strong on the vinegar. When I mentioned this to her she said that she uses the brown vinegar instead of the clear, that it is not as strong. She promised me the recipe as I have some cukes growing in the garden.

Nick, good luck with yours, sir.

The Joy of Pickling by Linda Ziedrich is really a fantastick book. I do a LOT of pickling, and I use it as a reference all the time.
Just be careful. If you do buy this books, your going to get very very inspired and next thing you know your going to be breaking the bank on pickle crocks, salt, and spices. There is no going back!!!

I like Pickles and Relishes by Andrea Chesman, too. Yes, fermented dills are the best, but we ate all those in December. Now we're into some spiced dills that are tasty, but some recipes aren't as good as they sound. Plus there's the operator error thing (what? you forgot to put the water in with the vinegar?). Do try fermenting, and then try different recipes until you find favorites. You're gonna have a lot of cukes!
